For a fabulous roast turkey recipe, try friend and photographer, Mike Odom’s specialty. Mike is from Florida in the US where they know all about cooking turkeys - Thanksgiving Day is the US version of our Invasion Day, Australia Day.

Our homegrown turkey, the scrub turkey, is barely edible - unbearably tough and pungent, even after long hours of stewing and marination. We recommend sticking to the traditional farm turkey, which, properly dressed and cooked, is unbeatable for festivities.
